You can also do some of Gerald's missions. Start them and ignore the objectives and you will have no cops and no time limit.
Should set it on easy so you have more lives. Only downside is you are limited to number of people in the mission.

I'll give it a bash tonight, had my fifa fix last night and shown the lads I'm a god. Catalyst for everything.
