They don't need to replace him. If Hernandez went the other way they'd also be filling a position they are more desperate in than midfield.
 
I seriously doubt that Juve will sell at this point unless.....the player's knee is seriously fecked up

What evidence do you have to support that claim? Juventus has been saying he's fit and recovered from the injury for the last few weeks. They wouldn't risk starting their talisman player if he's still injured.

They would have to say that either way surely, if they said he was fecked or that his fitness was questionable it would lower the price clubs would be willing to pay.

After he was confirmed to be leaving. With Vidal's knee problems, the recent reports that Vidal has told his teammates he's staying and now that tweet saying "We", he won't be leaving.

And most importantly we have 3-4 days until transfer window closes, Juve don't have time to replace him. Also, Vidal would never ever hand in a transfer request to leave.
