Had word from a friend who works at Nintendo UK that they are holding off on stock for the time being and are focusing more on the Neon Colour Bundles (there is a Splatoon 2 Bundle in Europe that includes the Neon Joy-Cons rather than the Pink & Green ones that Japan got). They want to try and push these bundles in July, so much so that I've heard that the Grey Bundles are actually frozen at the moment until they can try and deal with the expected Splatoon 2 driven demand.
Somewhat thankfully, after Splatoon 2 there isn't really a 'killer' title until Mario. There are some cool games, like Pokkén for example, but they're not exactly system sellers. So, throughout August and September we might actually be able to walk into a store and just ask for one (and actually be able to buy it). If you're not bothered about which colour bundle you get, I'd just hold off and pre-order a Splatoon 2 one if you can't find a system beforehand (you could always cancel the pre-order if you manage to buy one).

£319.99 for the console and Splatoon 2 bundle is pretty decent really. You're saving a couple of quid as I'd expect everywhere to charge over £40 for Splatoon.
