By changing the position of the bottles he's subtly signifying a change in tactics to the team, had he shouted these orders West Ham could have reacted much quicker but by doing it in this fashion it allowed for the element of surprise. Secondly, doing at that point in the game with a narrow one nil lead allowed for the first of three goals to be scored. Furthermore, not only did the movement of the bottles signify a change in tactics but also had a much deeper artistic meaning which signified that Mourinho now feels this is his home. When you go into somebody else's home you wouldn't start moving things around but when you move into a new home and become comfortable there you start to change things your liking. I can see this moment be looked at as one of the most pivotal in the season and it's a reason why Mourinho is one the best football managers in the game.
