Did not Paul Scholes play a lot freer role when he was younger? He was up in the box all the time... In 07/08 season we played three players in free roles, Ronaldo, Rooney and Tevez... Because Ronaldo defended less Rooney and Tevez did a bigger contribution. Fletcher too plays in somewhat of a free role? He is everywhere, but he regulates it after his opponents. So can Pastore, he is far more equipped to defend than both Kaka and Rui Costa (whom by the way worked brilliant in a two man midfield in his days in Fiorentina, and that was probably where he had his peak). Zidane actually did quite a bit defensively, like Cantona he seemed to be everywhere.
Problem with comparing Kaka and Pastore is that Kaka is not really a playmaker. He is extremely technical and very fast, but not the best passer in the game, last season he was second only too Marcelo in uncompleted passes. Kaka is a secondary forward, he was a winger before he headed to Milan, and then Ancelotti gave him a new role, where he as you say kind of got carried by Gattuso, Seedorf, Pirlo (the brilliant playmaker at that team) and Shevchenko. After Sheva left, he struggled - you kind of look to your top men to step up after such a departure, and Kaka didn't. Pastore can do a lot of the things Kaka can do, he is fast, not quite the pace of Kaka but still a fast player, but he is a far better passer, better at the defensive bit, he is actually stronger in the body than Paul Scholes whom always have done a decent defensive job... I believe Pastore can too but it will be a lot easier for him to adapt to those changes as young as he is, compared to for example Sneijder whom will be 27.
Punchline: A free role is all about adapting to the rest of the team. As a central midfielder in England you do have to do your share of defending. In Palermo, that is not as important, that does not mean Pastore can't do it (And it is false to claim that he does not contribute to Palermo's defense at all). He would not be used the same way in Manchester United as he would in Palermo, he would play against better opposition in a regular basis, but he would also have better team-mates.
Last thought. We play a lot of 4-5-1... How valuable would not a man like Pastore be in that formation? We really lack such a man when we do play 4-5-1.
After Shevchenko left Kaka was top scorer in the champions league and won world player of the year so dont know how much more he could have stepped up
