How is Miki 'a bit of a punt' but Sane and Gundogan aren't? One is very patchy and is always angling to move on, the other one has a long-term injury. Both riskier than Miki.

Henrikh Mkhitaryan is not a punt. No. Second part is deal official. Deal done means the clubs and the player have agreed deal in principle. Since then the payment structures and legalities have been sorted.
