I always threaten to do this but I somehow find a way to dodge it. It is very time consuming unfortunately. If I get time this weekend ill open a load of bronze packs and then what do I do?

You'll be able to do a load of cheap sbc's with them. Places like the Saudi, CSL and Japanese leagues have teams that can take 9 or so bronze players to get done.
Put all the ones that aren't from sbc leagues into two player silver upgrades, you'll hit the other players you need to finish teams from there.
Put all rare bronze and silvers into those icon SBC's (humble beginnings and the silver one), you'll get a load of tradable silvers back and if you hit the bigger ones like Huesca or Cardiff etc.. you can sell them for 15k if you don't intend to do entire leagues.
Put untradable silvers who aren't from SBC leagues into those french 3 player upgrades for now and you'll be able to do 81+ packs eventually.
If you do intend to do entire leagues the clubs you need to pack instead of buy are
Prem: Wolves (they have an army of wingers but not enough central players so cost a fortune), Cardiff (all their team is rare silvers and they are the most expensive to buy), City (you need 3 84's and you need to pack one of Mendy or Delph with loyalty because their only lw is Sane). Those 3 clubs cost about 40% of the price of the entire league.
La Liga: Huesca (you need 7 rare silvers here and they cost approx 10k each. Real (you need an 85 or 2 and too pack Luca Zidane), Valladolid (not as expensive but cost 30k unless you pack the silvers) Those 3 clubs cost over half the price of the entire league depending of how many silvers are on the market.
Serie A: Parma are the hardest to get done by a mile. Juve are the most expensive. Only Juve cost over 40k and if you can pack a couple of 84's it's easy. They have no real cheap teams either so theres no value here unless you are doing the entire league.
Bundesliga: Bayern are the most expensive here as they are so high rated, Nurnberg are the other killer as they are all rare silvers.
To give you an idea of avoiding those expensive team. Currrently I am
14/20 in Serie A and its cost me 35k (well over 300k worth of packs from all the following)
15/18 in Bundesliga for 30k
15/20 in La Liga for 40k
14/20 in Premier League for £37k
The issue is when you get to this stage and having to finish the leagues. At least 2 clubs in each league will cost over 100k combined if I don't pack the right players so its cheaper to spend 200k on bronze and upgrade to pack the silvers than buy them. You'll always end up paying a bit for City, Bayern, Juve, Real etc..
Once I gather enough players from example La Liga to go and do the cheap 15 again, I'll simply do the last 5 as quick as possible even if I have to pay a bit so I can get the league done and start again.
The best value usually comes from the prem.. clubs like United, Liverpool, Chelsea and Spurs offer great packs if you have the 6 or 7 players lying around and their common golds like Lindelof etc.. price won't move due to SBC's as they are already well over 700 coins each anyway. All 40-50k rare player packs and can be done for under 5k.
In La Liga Bilbao give a 45k pack and can usually be done for little or nothing as do, Valencia the same. Another great cheap one is Betis who give 6 rare gold and 6 rare silver again can be done for pretty much nothing if you have 6 or 7 players lying around.
