Atletico usually plays either 4-4-1-1 or a asymetrical 433.
In their "classic" formation they start with Koke and Saul as wide midfielders (=Koke - Gabi - Thiago - Saul), while Griezmann plays off a central forward like Torres/Gameiro/Mandzukic/Jackson/Vietto. In this system he has all the freedom on the world to roam around. Due to their injuries Correa also played a couple of games on the right side, so Saul played centrally.
In their "make-shift" 433, they usually start with Carrasco as a left winger, who provides width on the left, while Juanfran played as stand-in right winger similar to what Valencia does for United, while Griezmann is playing the classic role of a SS. Against the ball they usually switch back to a 442 and Carrasco defends as LM, while the other three midfielders fill the other three positions (= YFC - Koke - Gabi - Saul). Occasionally Griezmann has to defend on the right side of the midfield to help out, but it is not really his position.
He is best at finishing in/around the box, so he should play in this area. Additionally he has great work-rate/mobility and is always willing to be an option for his team-mates, which helps the team to link up. Thats why he is playing centrally, while shifting him out to the right would be stupid.
