Exactly. Scoring a Touchdown when your a single score up isn't considered unsportsmanlike but when you are 20 points up with a minute to go, scoring another touchdown is considered running up the scores and bad sportsmanship.

Offensively yes, defensively or special teams not so much. Many, if not all teams will kneel down late even when near the opposing goal line.
