I don't think different sound means genre defining... artists try all sort of things all the time, genre defining usually means an artist has set a new standard or created a blueprint that others follow. Kanye West experimented a lot, sure, but I wouldn't say he single handedly shaped the genre. It was already evolving and he was just part of that wave. He was trendsetting, made it more mainstream rather than genre defining.Absolute nonsense. His impact on the genre is huge, for better or worse. Dr Dre pioneered G Funk and he added crisp, layered sound, making beats more polished and cinematic. These artists changed the way rap was made. Kanye? He popularized soul samples and 808s but those already existed.
Would you say Justin Bieber defined pop the way Michael Jackson did? I don't think so. He was just part of its evolution. Kanye’s role is the same, mainstream but not the blueprint.
