They definitely don't give it enough time to balance out (it's still going up.) To be honest I think this probably happens quite a bit in UFC which is why they use the old style scales as they're easier to manipulate.

BT Sport coverage of this, and UFC in general, has been brilliant. They're promoting it heavily and their YouTube/build up stuff puts ESPN, UFC etc to shame, I think they'll do decent numbers for it cos of the time it's on over here and most pubs will be shut by the time the main event is on. They deserve it to be fair for the coverage of it.
