I think encroachment is when they tackle/touch an opponent before the snap. If they don’t touch them before the snap then it’s offside.

There’s also a neutral zone infraction, which is basically moving past the LoS. It can be causing a OLineman to jump, or unabated/unimpeded to the QB.

Those are different from offsides as they’re called dead, in the case of the latter so that the QB doesn’t get killed.
