Bournemouth (Quarter final is the furthest they have got)

Manchester City (won it 2023 and finalists 2024)

Brighton & Hove Albion (never won it and one final appearance in 1983)

Nottingham Forest (won it twice with last win in 1959 and last final in 1991)
 
Is this quarter final further proof of mid-table teams becoming stronger or of big clubs not caring about the FA Cup anymore due to tight schedules? Or both?

Both, but also comes down to luck of the draw at times.
 
Scheduling for the quarter-finals is going to be awkward. International week before so unlikely to play on the Friday night. And all 4 ties have teams that are playing on the following Tuesday in the PL. Looks like all will have to be played on the Saturday.
