For example if player X has played in the 60's/70's for a club that no longer exist but was professional at the time, does it count?

As long as they were a professional club team at the time the player played there, it’s valid.
And yes, any professional leagues across the world count.

Yeah I didn't even think about the picture on the book being unnamed players it was so grainy - I can't even tell who they are, now you got me googling the cover pic of that book

Picked this guy for the first time, had him as a safe option in case it went to Pick 3. Should be interesting digging up stuff about him although I expect a lot of it to be already done here in earlier drafts.
