You've gotta compare like with like so either all time shorties v all time lankys or present day shorties v present day lankys.
If you can get the appropriate keeper, it's pretty much a wash for the short guys. They have a ridiculous team with the 3 greatest of all time (whichever you prefer from Pele, Maradona and Messi) in the side.

Pace, aggression, mobility, technical brilliance out the hoo har.

A 5'8 - 6'2 team would be the one to give both sides a game.

As an aside this was an idea for a thread I had many moons ago that I left on the table because I couldn't be bothered compiling a 6'4" and above side. I used 6'4 as the cut off, but 6'3 brings a whole slew of great players into that team and makes it an easy build.

Not that I’m aware of, but obviously depends on your cut off as keepers in the 50’s, 60’s and 70’s weren’t particularly tall, or certainly not default towering, as a whole anyway.

I see your Lamptey and up you with a Santi! Who was actually really, really good, just not good enough to get ahead of a Kante or Makelele, but if the cut off becomes 5’6” then Scholes and a few others get the chop and he’s probably in the team (played in England). Zola also enters the fray then, probably.
Santi is a good one. I didn't think Makelele would be short enough. Surely we wanna be making the cut off point as unreasonable as possible while still being technically doable?
